Try our Perfect Summer Cocktail! As the weather warms and the nights grow longer, the backyard beckons for friends and family to gather. Enjoying an ice cold beer or standby cocktail is nice, but some evenings call for something a little different, but equally refreshing. For this alternative take on the classic summer cocktail (that can be made in a snap!), we give you this Raspberry-Rose Gin Rickey. The addition of rose water and fresh raspberries elevates this old standard. Easily prepared and even more easily consumed, it is the perfect drink for a leisurely gathering, and can be easily made ahead and stored in the refrigerator until your guests arrive (or not, if you can’t wait to sample!)
Raspberry-Rose Gin Rickey
SERVINGS: MAKES 4
- 3 cups fresh raspberries
- 1 cup gin
- 1/2 cup sugar
- 1/2 cup fresh lime juice
- 1/4 teaspoon (scant) rose water
- 3 cups crushed ice
Mix first 5 ingredients in bowl. Let stand 1 hour at room temperature, occasionally stirring and crushing some of berries.
Place 3/4 cup ice in each of 4 glasses. Top each with 3/4 cup raspberry mixture.
